We operate under USDA Federal Meat Inspection, and all the meats processed in our facility and sold in our retail establishment have an established point of origin and can be traced back to individual farms. Our network of family farms maintain time-honored, sustainable agricultural practices and raise their animals without the use of steroids, growth hormones or antibiotics.
All of our processing is done on-premises in accordance with the Humane Slaughter Act, without the use of chemical agents or processing aides, and cut entirely by hand. In addition, all red meat processed in our facility is dry-aged for added tenderness, flavor and safety.
