Bison - The Native Beef
Whitefeather Meats owes it's
start to Bison, commonly known as "The American Buffalo" and the only part of the bovine (beef) family native
to North America.
It was in 1987 that the Freddie Perkins Family purchased their first 3 bison
from a rancher in Lodi, Ohio and Whitefeather Farms began. After a lifetime of experience with livestock that included
farming with draft horses and milking dairy cows, the Perkins Family quickly adapted to caring for these incredible
animals and grew to love and respect the beasts that once roamed and dominated the North American Plains for so many
years.
In 1994 Whitefeather Farms was relocated and merged with a USDA meat processing facility to become
the only bison farm and USDA processing facilty all at one location. Whitefeather Meats was born. The bison
raised by the Perkins Family here at Whitefeather Meats truly are unique. The bison we raise are perhaps the only
bison anywhere to be raised, harvested, processed, with the meat available for purchase; all done at one
location.
The bison raised here are fed a diet of grass, hay, and chopped corn silage (this process chops
the entire corn stalk). The bison are raised free of growth hormones, steroids, or antibiotics. We are a health conscious
family and are pleased to provide the public with the same healthy all natural meat we enjoy on our plates.
Once a staple of Early American Life, and an important part of the diet of the native people that preceded
them, bison have enjoyed a much deserved comeback into the life and culture of modern America.
Renowned for their
impressive stamina and ability to survive in all types of weather conditions, bison truly are an animal to admire. These
facts alone are enough to perk anyone's interest; however, that's only a small part of what makes bison so special.
The quality of meat bison provides is superior to any other red meat by nutritional and taste
standards. Nutritionally bison comes in with 35% more protein, 70% less fat, 50% lower cholesterol, and HALF the calories
of beef. Bison meat is moist, tender, and satisfying. It has no gamey or wild taste but has a pleasantly sweet flavor. Bison are
a part of the bovine family, the same family as beef, and although some people think they are related to deer or elk, deer
and elk however; are more closely related to horses than bison.
Bison is hypoallergenic and can be eaten
by anyone who is allergic to other red meats.
